Simple? A roasting pan, small wood chips, a drip tray, a wire rack and a cover. and no holes where smoke could escape

What could not work or work better?

    Smoking requirs oxygen, which means holes. The fire to smolder it needs o2, and the smoke needs to escape just a little bit to draw the smoke up thru the food.

    I wouldn’t even attempt it unless you have a seriously good exhaust fan in your house that vents to the outside (not above the microwave and back into the kitchen).
